Thought I would post slightly improved instructions to make it a bit fairer...
You have to swap two adjacent gems, to make a line of 3 or more gems the same.
They will then disappear. You will also notice that the background colour changes from yellow to black.
To stop the time running out you have to keep getting lines, the time constantly ticks down, when you score it goes up a little bit.
To get to the next level you have to change all of the backgrounds to black.
